Potassium sorbate can be added to soy sauce and vinegar-containing salt to prevent spoilage and mold. It can also preserve the freshness of pickled vegetables and kimchi.

Fruits and vegetables

Potassium sorbate can keep fruits and vegetables fresh for up to a month at temperatures of up to 30℃. It can also prevent oxidation and rusting of tinplate on the outer packaging of canned vegetables.
